Just the facts - this comes from the Asocición Cooprativa de Producción Agropecuaria El Jabalí de S.R. What is it about small groups with big names? This coop was formed in 1980 and has 146 member farms, 12 of which are women-owned.
42 % of areable land is dedicated to coffee production, with sugar cane coming in at #2, and providing some back-up in case of low 'C' levels or poor harvest. There is some serious elevation here; the highest verified farm is at 1983 meters above sea level.
Like much of El Salvador, bourbon trees are common. Some 90% of the El Jabalí coffee is bourbon, with the remaining 10% coming from pacas (a bourbon mutation).
Because you were wondering - Jabalí means wild boar.
